Possibly: First of all, congrats on quitting smoking! truly, truly, that is fantastic! while it is not totally clear why your throat is dry, it may be normal. Also, you may start to cough more, in fact, after quitting smoking because all the little hair cells called cilia start working again after you quit. So, all that junk stuck in your lungs will start coming out. Keep up the great work!
