Most likely...: ...You are allergic to the soap you are using, or you are showering too frequently and washing the protective oils off your skin. Try showering less, with a different (and mild) soap. If that doesn't work see your doctor, because it could be something unusual -- for example, the classic presentation of a rare disease called polycythemia vera is itching after bathing.
