Can having micro colitis cause you to feel like it is hard to breathe at times?

No: Micro colitis (presumably collagenous or lymphocytic colitis) lead to an "irritation" of the colon and thus an increase in colon activity - cramps and frequent bowel movements. It should not lead to any more general symptoms such as breathing problems (unless they are worry related about the change in bowel pattern).
