Aged Cheeses: Lactose content varies by cheese. Hard, aged cheese like swiss or cheddar have less lactose due to the lactose being broken down as the cheese ages. Parmesan is an especially good cheese for the lactose intolerant. Many brands are also making lactose free versions of cheese now, so checking labels is always a good idea. Lastly, yogurt cheeses have less lactose because the bacteria break it down.

Sharp Chedder: My favorite as a lactose intolerant physician is a sharp cheddar. The lactose is fermented by the organisms responsible for the flavor of the cheese.The milder you go the more likely some will remain but most can tolerate a small amount of lactose without symptoms.
