I've just read an article that uk researchers have discovered a high prevalence of the rare disease autoimmune hypophysitis in gulf war veterans and the link is over-vaccination. is this credible?

Don't know: I have not read any article about this recently and hypophysitis is uncommon. So if it is popping up more frequently then yes the cause needs to be teased out. Whether it is from vaccine or not is hard to say. People get vaccines every day and they have been blamed for disease like autism but ultimately this did not pan out. In short more research needs to be done on the subject.
