why is my mouth and tongue so sore and sensitive?

Many possibilities: Anything from too much acid or spice in your diet to a reaction to your toothpaste to dental or gum disease to menopause to viral illness and more. Best to see your doctor and have him/ her take a look in your mouth and if necessary refer you to an ENT doctor for evaluation.

Mouth sore: It's not uncommon for your mouth and/or tip of tongue to be sensitive after a bout of hot, salty, or spicy foods. This is related to surface damage and should resolve within a few days. If not please see your primary care physician.

Seek an oral exam: The small red spots could be of many different origins.  An avenue to pursue is to see of they are of a bacterial or fungal nature.  Please seek your dentist for a differential diagnosis.  A thorough exam should yield relief and rule out any underlying pathology.  This way the appropriate medication oral or topical canbe given to relive your symptoms and concerns.

Non-specific: These symptoms are too vague to allow even speculation as to their cause.  If they continue, make a list of all symptoms and time they occur and see your pcp and allow full exam and evaluation.

Tongue sensitivity: Allergy, change in foods/spices, change in meds, change in supplements, neurologic disorder, burn, lots of other reasons. Avoid trigger foods for 2 weeks. If not completely gone at the end of 2 weeks from onset, see your Dentist.

Previous cold sore?: Sometimes a painful sensation can be an early warning sign for eruption of a cold sore.  I wouldn't be surprised if after a few days you develop an ulcer or other skin lesion.

the skin inside my mouth behind my top lip is super sensitive and kind of sore and seems like salt really bothers it. what could cause that?

: It is very likely that you have a small ulcer on the inner side of your lip. Such ulcers are quite common affecting the mucosa lining of the mouth. Sometimes these are caused by virus infection.
They usually subside in 4-5 days. You can take Vitamin-C tablet once or twice daily for 4-5 days and the pain should go away. If the pain is persisting beyond 1 week, you should show it to your dentist.

can a canker sore be under tongue, off to the side, around red area & be a slightly raised short oval shaped sensitive but not really painful spot ?

Ulcer: It sounds like an aphthous ulcer, would recommend seeing an ENT or dermatologist. Sometimes these can be due to viruses.

left side of tongue sensitive/sore, also left throat, discomfort when swallow. some swelling left neck under jaw for 2 days. rt side is ok.  normal?

Not normal: Sensitivity on one side of the tongue with throat discomfort is not normal and somewhat concerning. You should start by having your primary doctor examine you and if need be, an ENT may need to look in your throat with a special camera. Should your throat discomfort worsen to a point that you are unable to swallow comfortably or begin to have difficulty breathing you should go to your nearest er.
