Just what it says: An "opiate" is a chemical derived directly from the opium poppy plant. The naturally occurring chemicals are morphine, Codeine and paparverine (among others). Semi-synthetics can be made using the same molecule like oxycodone, hydromorphone and others.  Fully synthetics "opioids" act at the same receptors but are chemically completely different, like Demerol (meperidine hydrochloride) or methadone. Endorphins are "opioids.".
