how come people who have gallstones always complain of gastric pain?

They don't always: Gallstone pain can be in the right upper quadrant of the abdomen, the upper central portion of the abdomen, the right upper back and shoulder blade area, the right shoulder, etc. Other symptoms include bloating, belching, fatty food intolerance, nausea, vomiting. With complications symptoms can get severe including jaundice, fever/chills, pancreatitis, etc.

Reflux: It's true that the discomfort of reflux occurs in the esophageal area(chest) especially in the reclining position. In my experience gastric ulcers often have atypical symptoms and it could be causing your distress or perhaps reflux is being felt in the lower esophagus near the stomach junction. Chocolate can produce reflux. Since you're so symptomatic, I hope you're under the care of a gastroenter

No connection: The only exception to this answer would be in someone that has a really bad gallbladder infection due to stones, and has a problem with their immune system where the white cells go very low rather than rising to the occasion.  Typically immune system compromised folks.

Time to see a doctor: A young adult woman who feels palpitations should be checked by her primary care doctor (Family Medicine or Internal Medicine, not Ob-Gyn) to make sure her body is ok from a general check-up point of view, and to listen to her heart. It could be a thyroid hormone problem, or could be that her heart is beating irregularly for another reason, etc... Additionally, a cardiologist can also evaluate.

they will keep in normal range during surgery and recovery.
The more you are in control ahead of time is better!

Yes and Yes: To both questions. Unfortunately, the medication does not dissolve all gallstones and the stones recur when the medication is discontinued. It is possible to remove the gallstones and leave in the gallbladder but this is just a setup for forming more stones. Leaving a chronically inflamed gallbladder in place can also cause other problems down the line.

Gallstone formation: Stone formation is a complex process that depends on the contents of the bile fluid, which includes the balance of acidity. Hormones, gallbladder contraction strength, and bile fluid containing the balances of salt, cholesterol, bile acids, & inflammation (bacteria) likely play a larger role. Most people are referring to reflux disease when they talk about acid; gerd doesn't cause gallstones.

Yes rarely if untrea: Yes in rare occasions , if complications like gangrene, perforation , severe gall stone pancreatitis , jaundice, gall stone ileaus , sepsis, cancer due to gall stones  etc may cause death if untreated.

Prescription: See your doctor to see if you are a candidate for medical therapy with something like actigall (ursodiol). Medications can take a few years to dissolve gallstones, does not work well for larger stones, and it does not work at all for calcified gallstones. Gallstones can also grow back unless you have surgery to remove the gallbladder & gallstones.
