Yes: Many people eat gluten and have no problems with it.  It is important to realize that many people who are not allergic to gluten and don't have celiac disease are what  we call gluten intolerant.  This is often because foods rich in gluten also have lots of carbohydrates in them and people feel better when they don't eat excessive carbohydrates.

No: There is nothing inherently healthier about a gluten-free diet unless you are one of the people with celiac disease or gluten-intolerance.  In fact, most processed gluten-free foods are high glycemic and lower in fiber than their gluten-containing counterparts.  If you are relying on a gluten-free diet, choose whole unprocessed lean meats and vegetables and fruits and avoid the packaged junk.

Gluten-free foods use grains such as corn, rice, millet, quinoa, and sorghum that don't have gluten, but such foods are more expensive and harder to find. Healthy gluten-free foods are fine for anyone to eat, as long as they are part of a balanced diet.

Ill-defined: Both are "pop" restricted diets and there are quite a few people convinced that one or both has helped them subjectively despite their not being in a group that needs to restrict (gluten enteropathy, galactosemia). It will make your life much more difficult, it will be even harder to be a good guest, and we await objective results from real science. Benefits may really exist for some people.

Yes, it can be: If you're sensitive to gluten, you may feel a lot better not eating it.  Vegetarian diets can be very healthy, especially if you avoid processed foods and focus on fresh ones.  You can get protein from sources like eggs, dairy, beans, etc -- also leafy greens have some protein. If you're vegan (eating no animal products at all), you'll probably need to supplement vitamin b12.

Many lists can be...: Many lists of non-dairy or non-gluten foods can be found on the internet. Peanut butter, eggs, and tofu should be fine.
