Yes: White rice has a high glycemic index, which means it causes a rapid rise in your blood sugar. Part of the Insulin response to that rapid increase in blood sugar makes you fat. A tiny amount won't hurt, but it makes it difficult to lose weight. Replace the bread with vegetables. Not rice. Starch is not a required part of a meal. You can get calcium from yogurt, cheese, sardines, greens.

Try steamed veggies: If you're watching your weight, you may want to consider a steamed veggie dish. If the dish is cooked with sauce, you may wish to have them prepare the dish with the sauce on the side. Depends: I would argue that eating plantains is better than eating white, processed rice.  Then again, what isn't healthier than white, processed rice?  These days though, certain rice products can be brown or packed with other fibers/nutrients.  Enjoy!

Sure: To gain weight, eat more calories.  To lose weight eat less calories. All food has calories, some more than others.  Yogurt and rice have more calories than celery and tomatoes per serving, but less calories than a serving of red meat or fried vegetables.  Why do you want to gain weight? If you are not lifting weights intensively you add  fat, not muscle, which no one needs!

Plastics are known to contain toxic chemicals that are harmful to Human Health.  Infertility, Obesity, Cancers of different types have been associated with plastics. One should not eat foods from melted plastic containers.

No: It is not likely to have any ill-effects. Overcooking does damage some nutrients and you may wish to invest in a rice cooker. 
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex.
