GOOD GOAL >15 weeks: Many studies show that a reasonable rate of weight loss is 1-2 pounds per week.  So @ that rate 30# loss should take approx. 15+ weeks.  You may have to look closely at calorie intake and 'not just stop red meat'. Perhaps a  1300-1500 kcal/day  'meal plan' will net you the weight loss you desire. It is a great idea to 'walk 2 miles a day'. Good job!

Could be normal: Normal serum iron level ranges from 22 to 184 ug/dl.  Suggest to repeat same test at different lab.

Elevated cholesterol: Red Meat  is not necessarily bad for you. You can avoid other sources of fat to control  your cholesterol.. You should avoid fried foods such as  fried fish or deep fried breaded chicken. . It is okay to have Red meat  twice a week providing it is lean in the form of fillet or  London Broil . You should always boil or broil your meets. Avoid sweets which are high in sugar and fats. .

It isn't an allergy,: So you don't have to eliminate the dietary triggers altogether in most cases, but you definitely want to minimize the risk, so the less alcohol (esp. Beer and red wine), red meat, organ meat,  shellfish  and other trigger foods you can eat, the less likely you will be to have an attack.

Depends: Are you trying to lose weight or reduce saturated fats from your diet?  To lose weight it is better to eliminate bread full of sugar and processed flour. To reduce saturated fat, it is better to limit meat.  You can eat a bread (in freezer section) like alvarado street at 50 calories a slice and still enjoy some grass fed, lean beef once in a while in small portion and accomplish both.

Start   S-L-O-W-L-Y: If the diverticulitis is severe enough to require hospitalization and IV antibiotics, we usually hold off on any food until the inflammation decreases, after which we start food slowly: first liquids and then a low-residue diet for at least a couple of weeks. Therefore, i would avoid red meat early on and re-introduce it in your diet in moderation after all your symptoms have completely resolved.

NO: Your blood won't thicken, but red meat, as well as dark green, leafy vegetables, can increase your iron content and increase your blood count. But, it won't be thicker. Interesting concept, though. Good luck.

Yes it does: People who eat as little as on serving of red meat a day whether processed or non, have an increased risk of developing diabetes.This was published in a large study from harvard in 2011.The meat implicated was both pork and beef.
