Question vague but: Our bodies are in a simple state of balance. If we eat more calories than we use, we gain weight. If we eat fewer calories than we use, we lose weight. So, some people who stay the same weight eat more than they use on some days, and less than they use on other days... but it averages over time, so that they are eating and using the same number of calories. That is often why weights don't change.

If eating too much: In general, one type of food doesn't cause anything. It's the whole picture that tells the story. With diabetes, overeating foods or drinks that have a lot of sugars or other carbohydrates (meaning a diet high in sugar or carbs) leads to diabetes. Reason is that sugars and carbs (especially simple starches) force one's pancreas to make more insulin. Over some years, pancreas fails from overuse.

That's a lotta fat.: Granted it's not saturated fat, which is present in red meat for example, but you've listed a fairly large intake of fat, which albeit healthier fat could nonetheless contribute to your total caloric intake and contribute to weight gain.  Diabetics need to keep their weight in check.  I would advise you to cut this back to once or twice weekly, and not the PB and avocado on the same day.

See your doctor: I think you know what the answer to this is. You need to be checked out by your doctor. The best way to diagnose diabetes is to have venous blood drawn rather than from a fingerstick. If you have a family history or other risk factors then go see your doctor. They will order labs to confirm or deny the diagnosis. It shld incl Hg A1c, insulin, fasting gluose maybe even gluc tolerance test if needed
