Otolayngologist: Since both tonsils are hypertrophied and if you have no evident enlarged lymph glands or abnormality of your cbc, I would suspect some systemic cause other than malignancy. Mononucleosis needs to be ruled out by repeating the monotest. An otolaryngologist is best qualified to evaluate and advise you especially if the enlarged tonsils present a mechanical problem such as obstruction..

Wish you good health! - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex. 
Get HPV vaccine

Variable: Sometimes it can take a long time for the tonsils to go back to their normal size. Months in some patients. Sometimes they can remain enlarged. Steroids may help. See your doctor.

No: The tonsils are swollen from mono but the virus is in your cells and can remain there for years. Having your tonsils removed will not reduce your chance of symptoms from chronic EBV

YES: The germs of mono do not care whether you have tonsils or not. If exposed and susceptible,they will enter your body through your mouth/throat and find tissue to invade. You may not have throat swelling as prominent as you would with tonsils, but being without them does not make you immune.
