Bleeding gums: I would first see your dentist. I would recommend the softest toothbrush you can find at the store. You may want to try a sonicare brush, flush and rinse with mouthwash.

Allergy?: It is very possible that you are having an allergic reaction to one or more of the ingredients in the cookies.  Probably a treat you will need to avoid.

White bumps: Could be anything from a cyclical harmless virus to oral cancer.  Cannot tell without physical examination.  Any red or white lesions in the mouth should be evaluated.  See a Pro.  Call your Dentist for an examination.

World health organization study shows a majority of adults have some form of gum disease.   It is better to treat this sooner as the end result is loose teeth leading to loss of teeth. Secondly, monitor your force when brushing 
lastly, if gums bleed when brushing, you may have inflammation or gingivitis causing pain. If this is the case see your dentist.
