Another Opinion: When it comes to diet and nutrition there is very little science and a lot of myth. A good balanced diet in scientific terms is predominately proteins. The old fruits and vegetables myth as the majority of calories has been repeatedly proven to be dangerous and false. A good diet should be low to moderate calories with 60% of the calories as proteins, 25% as carbohydrates and 15% fats.

Gradual changes: I would recommend small changes at a time so that your overall lifestyle is maintainable. Would decrease most processed foods, increase vegetables, prefer lean meats/chicken/fish, reduce sugars and fats. Sounds like you are motivated! good luck.
