Starch: Rice is a starch and behaves like a simple carbohydrate when eaten. It can have a high glycemic index, meaning that it is rapidly digested and and raise the blood sugar rapidly. So, it is not the best food for diabetics (similar to baked potatoes). However, brown and long grain rice would be better than white rice. Also, whatever you are eating with the rice can slow absorption and lower the rise.
