Wait to eat it: It is better to wait until your mouth is healed before you eat any raw sushi. You are at higher risk of infection when you have open sores.

Perspective: If there are parasites in your sushi, they will enter your system whether or not you have open sores. Remember, you are swallowing your food. There is always a risk with raw sushi, as well as many other not fully cooked foods. I love sushi and only go to some high quality restaurants for it.
