MVO2max: In liters/minute is probably the best, although it requires "maximal exertion" which can be risky in populations at risk for heart disease. Cycling, walking, running, treadmill, stepping or so-called "sub-maximal protocols" are often used in that they don't require all-out effort to estimate fitness levels.
