You can try it: There is a single publication on alzheimer's & coconut from an obscure institution in thailand in a relatively obscure medical journal that remains unconfirmed after just over two years. "coconut water" is already promoted without real evidence for many things. Published claims that sound too good to be true are almost always not true. There is probably no harm in offering her coconut juice.

Anecdotal evidence: Unlikely to hurt. Not clear that it will help but some people report benefits. A geriatrician, neurologist or geriatric psychiatrist can be helpful.
