What are the chances of developing dvt after laparoscopic cholecystectomy? would dvt symptoms be apparent? is screening a good idea?

Low: Unless you have an inherited blood disorder, history of prior dvt, or you have laid in bed or a chair for a long time, the risks of DVT after outpatient laparoscopic cholecystectomy would be quite low. Yes, generally DVT would have symptoms of lower leg discomfort or swelling, and "screening" is generally not done unless you have some concerning symptoms, or added risks that you have not given us.

Can happen: Dvt can happen after any surgery. If you have calf pain on either lower extremity , swelling, tenderness then getting an u/s of the legs is a good idea.
