Is it possible for your throat to spasm and cut off your breathing? if so how common is this and what's the cause?

Possible, uncommon: You are describing what may be construed as laryngospasm. Your vocal cords can paradoxically adduct(close) and cause an abrupt shortness of breath. This can be related to many issues such as postnasal drip, acid reflux, paradoxical vocal cord motion disorders, and other causes. You need to see an ENT for detailed history, exam and videostroboscopy(special exam of vocal cords).
