Mostly theoretical: Genetically modified organisms (gmos) are organisms in which the dna has been modified in a way that does not occur naturally. Gm foods currently available on the international market have passed risk assessments and do not present health risks - no effects on human health have been shown as a result of the consumption of such foods. http://www.who.int/foodsafety/publications/biotech/en.

Probably not much.: There are lots of valid reasons to be opposed to the widespread adaptation to genetically modified food (just ask a farmer) but health outcomes may not be one of them. Foods are genetically modified to prevent disease and make crops more drought resistant. These aren't frankenseeds and the change in crop dna won't likely result in human disease.
