Yes: Blood does thicken in response to a certain type of cholesterol-like compound, specifically triglycerides. When the levels of triglycerides are extraordinarily high, the blood becomes thick and can even appear milky. Do a google images search on "lipemic serum" if you want to see for yourself, but be warned; it's a little gross.
