Brain is redundant: We were created with amazing brains. Regions of the brain function redundantly, and the areas that control certain functions may be spread out over an area. So, in order to sit up and move in bed, many different areas of the brain have to work together. Fortunately in this case, enough of the function remains to complete these tasks.

Plasticity: Parts of the brain can take over the function of other, injured parts. That is called "plasticity". The brain has some flexibility, particularly the younger we are. However, there is a limit to that and there is only so much we can recover without a visible loss.
