Plant Digestion: The aspect of plant materials that is hard for humans to digest is cellulose. This is present in the cell walls of plants and is a form of starch or carbohydrate. We cannot break down the Cellulose molecule into a form that can be absorbed, so it can cause loose stools, bloating and gas. Many meats are not only high in protein but also contain a higher fat content than most plants.
