Do people ever get pneumonia from water accidently going down the wrong pipe?

Sometimes: Often aspirated food or fluid causes inflammation in the lungs, but it only occasionally causes infections (pneumonia). If you have fevers, chills, sharp chest pain, or worsening cough then you may need further evaluation and perhaps antibiotics.
