High sugar: Processed foods are usually high in simple sugars like corn syrup aka high fructose corn syrup and get absorbed easily as compared to more complex sugars in starchy vegetables and high fiber foods which takes longer to digest therefore absorb. This fast absorption leads to quick high spikes in blood sugar.
