Excessive intake of carotenoids usually from yellow vegetables such as carrot is not associated with toxicity, but may cause yellow coloration of the skin (catotenemia), often involving palms and soles. Carotenemia is is especially likely to occur in individuals with liver disease, diabetes mellitus, or hypothyroidism. No exact amount to cause carotenemia has been determined.
