I want to know why one minute i'm breathing fine but then out of nowhere i get this sharp intake of breath involuntarily and it scares me?

Auto-regulation. Your breathing is one of the ways the body regulates the delicate acid/base balance of your body. You exhale CO2 as part of natural regulation. Periodically, if your hourly exhaled CO2 is less than needed, the autoregulation of the body will trigger a deep breath & exhale enough to catch up. By itself it is a natural event. If it really spooks you, go see your doc for a checkup.
