Is it ok for a dentist to curve the needle by pushing it with his hand. saw the dentist push the needle to curve it but wasnt sure if this was a risk of h pricking himself and then proceeding to use it on me. super worried that i can get infected?

Absolutely OK. The needle is sterile. The Dentist is gloved, trained, and experienced. Do you worry about getting an infection from a fork in a restaurant that isnjust washed, not sterilized?
