A 21 day water fast is not ever recommended as being healthy. If somebody did try to do this, they would certainly need medical attention. Please don’t try it. Good luck.

What are you trying to accomplish by this fast? Is it for weight loss or world peace? If you want to lose weight, a combination of caloric restriction and exercise are better for maintaining your health. If you reduce your intake below about 800 calories/day, it would be prudent to do it under medical supervision. You need some protein, carbohydrate and micronutrients.
