For those who experience symptoms from a hiv infection, would you have antibodies present prior to the onset of those symptoms?

Yes. The symptoms of acute HIV infection are due to the immune response to the infection, not to the virus itself. The immune response is reflected in antibody. It is not possible to have symptoms of HIV and have a negative HIV antibody test.
