Does the oximeter drop below healthy oxygen level if food is caught in your throat? i went to the er today but they never scoped or did x-rays to check, but said i'm mostly fine since i can eat, drink and talk and have healthy oxygen levels?

Just like when you hold your breath, your blood oxygen content can decline some temporarily if the food issue interferes with breathing. If you breathe around it (food goes down a different tube) normal oxygen level would likely remain. Documentation of normal levels after the event means there was no longer term impact on your oxygen level/lungs.
