If i one month ago i had an upper endoscopy that was negative for anything insidious, what's the likelihood that a tumor of the pharyngeal region was missed and has subsequently grown large enough to cause dysphagia?

Unlikely. If you have any concern see an ENT doctor for evaluation of the pharynx, that can be done without invasive endoscopy. Wish you good health!
