For blood work, i'm often told to fast a certain number of hours. does the fast begin right after you eat, 20 min after or maybe even 30 min after? sometimes it takes awhile for nutrients to get into the bloodstream. maybe i'm being meticulous?

Usually it means no food after midnight till blood drawn and drink water if thirsty.

Fasting starts when you finish eating. Fasting for 8 hours is needed for blood glucose and a minimum of 9 hours for blood lipids. You can drink water and take your medications, unless told by doctor to do otherwise.
