The suddenness suggests that you may have an allergic reaction, swelling in response to a f aspiration or acidic reflux and vocal cord dysfunction. Discuss these possibilities with urgent care or your physician. What was the time of day, relationship to meals and was there any choking? Many patients don’t have symptoms with GERD. Watch for trouble breathing, fever and cough.

True swallowing difficulty is broken down to trouble transferring food from mouth to throat and then trouble transferring food from throat to esophagus. My sense is that your symptom may be the result of thinking too much about the swallowing maneuvers if your symptoms are only intermittent. It's probably a type of anxiety.
