Good evening doctors. my friend just came back from a caribbean cruise. she feels fine--no covid symptoms and does not want to get tested. we are supposed to go to dinner & dancing in a few days. how would i know if it is safe to eat & dance with her?

Even though cruise ships are high-risk environments and the CDC has issued warnings about cruising, your friends risk (and your risk) is low. I would suggest to her that getting tested (rapid test at home) is a friendly thing to do. If she still refuses, I would wait at least 5 days before seeing her.

If she doesn't have any symptoms and it is at least 5 or more days before you go out than it should be fine. If any symptoms occur than testing is needed. You both can be vaccinated but still can get COVID. Where you go for dinner make sure it is a venue that checks for vaccinated attendees.
