Yes, possible as natural immunity has been described where in rare cases individuals are exposed, but do not catch the infection or others that are exposed, develop the infection with no signs of infection and they have a protective antibody titer if checked.

Infections, including viral infections are not uniform. Some people are genetically resistant to a given bug. A small proportion of people are naturally resistant to HIV infection. Your friend may not be susceptible to Covid infection based on her genetic make up, or she had a subclinical infection and had immunity to Covid. Subclinical infections with Covid are common. Get vaccinated.
