Recent hep b tests: hbsag - negative hbcab (total) - negative hbsab - positive (vaccinated 15 yrs ago) was hospitalized 7 yrs ago with acute viral hepatitis. all acute screens at that time were negative (a/b/c). how likely is occult infection?

Unlikely. If you have a concern, your doctor could order a Hep B DNA test, however, it is not warranted. For healthy diet: http://www.choosemyplate.gov/., exercise 30 minutes/day, drink enough water daily so your urine is mostly colorless, have safe sex, no tobacco alcohol weed or street drugs.
