Probably very little: An excess of beta carotene gives you a bright yellow skin called carotenemia, often mistaken for jaundice. It is entirely benign and disappears if yellow vegetables are cut back. This probably means that there is a natural mechanism that stops the oxidation of beta carotene to make vit a if it is not needed.
