An ejection fraction over 75% may be caused by hypertrophic cardiomyopathy which causes your heart muscle to contract harder. If you had this condition it should have been demonstrated on your echocardiogram. If you haven't been been by a cardiologist as yet, consult one for evaluation, followup and advice. If you have one already.he/she can advise you best.

Most likely no. As long as the rest of your echo was normal (i.e. not a hypertrophic cardiomyopathy or other cardiac muscle condition) generally not a concern. That calculation can vary based on how the echo sonographer measured the chamber sizes, what method was used to calculate the EF, how hydrated/dehydrated a patient was, their underlying body/heart size, etc. Ask your doc for your own case.
