Protein is key: Carbohydrates, particularly simple carbohydrates, stimulates the release of insulin from our pancreas. The spike can be quite substantial. But if you eat carbohydrates along with protein, you can modulate this insulin response. For example, instead of eating plain crackers, combine it with cheese or peanut butter. So I always add protein to your carbohydrates and you will be fine.
