How long does a sore throat and laryngitis last even with a course of antibiotics?

Depends: If the symptoms are caused by a viral infection, antibiotics are not effective and symptoms resolve on their own in several days or so. A strep infection, documented by a rapid throat culture, does require antibiotics and would respond after appropriate antibiotic treatment within a week as a rule
