That's quite young: Many 12 month-olds don't like foods with coarser, firmer, harder, or stickier textures. It's fine to have mashed up foods until they grow comfortable with foods that need chewing or are harder to swallow. Each child is different. Parents can offer a variety of foods (that's important) but mashing everything up is ok. Normal kids explore foods at their own pace, and should be fine beyond 18 months.
