Any time: Metronidazole can be taken at any time, with or without food. There is no need to delay starting treatment.

Several hours: If you have taken this in the days before you consume wine laced sauce you may have the expected reaction (nausea) until you have been off metronidazole for a couple days. If you have not started it yet, any alcohol in that meal should be gone from your system in a few hours so you could take it then. Many such sauces burn off the alcohol in the cooking process so any risk may be minimal.
