Is it normal to be coughing up mucus almost on a daily basis? sometimes it is clear but sometimes it is discolored, and sometimes it feels spongy.

Not normal: If you cough has lasted more than two weeks, you ought to see a doctor for an evaluation. In particular, tuberculosis and lung cancer need to be ruled out. It is not feasible to provide a meaningful opinion without additional history, physical examination and may be some tests.
