Complex carb: In general complex carbs such as whole grain foods are healthier because their digestion takes longer through the gastrointestinal tract and thus does not cause blood sugar levels to rise as much as simple carbs. Anything that causes fast rise in blood sugar can cause diabetes and obesity.

No one knows: The "received wisdom" is that whole-grain bread is healthier than the very processed stuff. It's tastier and more fun to eat. It does change the composition of stool in the intestine and thus the bacterial products. If you believed every obscure-journal claim, you'd be reading uncritically -- and hard-and-clear results -- especially animal studies -- are conspicuously absent.

Maybe.: Whole wheat bread can be labled "whole wheat, " even if the fiber is micropulversied, the wheat germ bleached, and then reconsituted. Certainly the higher fiber content slows digestion of carbohydrates, which raise Insulin levels (not good), and aids with colon health.
