I was told my stomach might be emptying too slowly after having an endoscopy. can this be caused by my gastritis and esophagitis? or my anxiety?

Stomach emptying.: Slow emptying of the stomach shouldn’t be caused by any of those things. Could be a separate issue entirely. But rather than diagnose this by endoscopy, it would be wise to pursue more functional than anatomical testing with your Gastroenterologist.
