Yes: It could cause arrhythmia due to electrolyte imbalance and hypovolemia can cause a drop in blood pressure and make the heart beat faster

Do you mean: skipping one meal a day or do you mean not eating for a week? Potentially you could develop dehydration or electrolyte abnormalities which could result in arrhythmias.
