Vagus nerve: The vagus nerve, when stimulated,causes temporary slowing if the heart rate. Apparently drinking ice cold liquids causes this reaction in your case. My suggestion is to drink cold beverages very slowly. You could wear an outpatient heart monitor which would document such a reaction.

Cardiac awareness: Lots of factors influence the heart rate. The availability of easy to use heart monitors has enabled people to pay close attention to these normal reactions. And some people are particularly aware of internal bodily stimuli. Unless heart rate changes are associated with more worrisome symptoms (chest discomfort, shortness of breath, dizziness/fainting) they are unlikely to mean anything bad.
